Are you a curry fanatic?  Research suggests that people don’t just crave curry because of its spicy taste, but also because it stimulates the senses and provides a natural high.  So what is curry? Curry is a generic term to describe a wide variety of dishes originating in Indian, Thai or other Southeast Asian and West Indian (Caribbean) cuisines: a complex combinations of spices and herbs, such as turmeric, coriander, cumin, and chile - the precise selection of which is a matter of national or regional cultural traditions.  In this hands-on class, you’ll explore some of the world’s most popular curries – including Indian, Thai and West Indian.  First, you’ll learn to prepare basic curry pastes, including a Thai red curry paste, and Indian masaman & green curry pastes, and spice blend garam masala, then prepare some diverse curries, such as Gaeng Care Phak Ruam (a Thai mixed vegetable curry), both northern & southern India chicken curries, a Bombay shrimp curry with coconut rice, and a West Indian Roti (unlike the original first brought to Trinidad by East Indians, the West Indian version is more like a flour tortilla, being made with white flour leavened with baking powder) & Chicken Curry.
