Fresh Fish, Fresh New Restaurant: Shiku Sushi Opens on Prospect Street

A new sushi restaurant opened in La Jolla just in time for summertime.

Shiku Sushi is the latest edition to the La Jolla food scene. The popular sushi restaurant, which replaced Tadashi Sushi on 1277 Prospect St., officially opens its doors on May 3 and has quickly become a hot spot for diners looking to try creative seafood dishes.

Owners James La and Johnny Kim, who both reside in San Diego now, opened the first Shiku Sushi in Seattle, Wash. six years ago and are excited about the addition of a second location.

“My partner Johnny and I have been living in this area for a while, and the La Jolla Cove area is so beautiful, we decided it was a good spot to offer our fresh sushi.”

Shiku Sushi sources their fish from all over the world, including from New Zealand, Japan and Fiji, in order to offer guests the highest-quality meals.

In addition to being known for their fresh ingredients, the restaurant is earning a reputation for their signature dishes, and their unique names. Rolls like the Jewel Roll, Tiger Woulds Roll and I’m So Baked Roll are popular among diners. The restaurant also offers sashimi with a twists, giving guests a choice of unique sauces to pair.  

Guests who dine at Shiku Sushi can expect a modern, yet intimate setting. While the restaurant only seats about 30 people, the large glass windows open the space.
