A chef is a sorcerer, docent and narrator of the senses - navigating new places and creating experiences without ever leaving the kitchen. My culinary journey began the day I was born on the island of Jersey and moved to Brittany, France to live with my Grandmother. My family is comprised of butchers, bakers and restaurateurs, so there was no question that I was destined to become a chef. At the age of 15, I started my formal training, eventually moving to Washington D.C. and then moving to the magical shores of La Jolla, California.
Since 1994, I have been the Executive Chef of the La Jolla landmark restaurant The Marine Room, The Shores Restaurant, and La Jolla Beach & Tennis Club. My talented culinary team includes Chef de Cuisine Ron Oliver at the Marine Room, Chef de Cuisine Amy DiBiase at the Shores Restaurant and Chef de Cuisine Brian Freerksen at the La Jolla Beach and Tennis Club. Together we weave tales through unique dishes that reflect my travels.
